I usually beat the eggs a bit and then add the milk, vanilla, and applesauce and mix a bit more. I then add 1/4 cup of brown sugar, the oatmeal, spices, baking powder, fruit, and nuts and blend with a wooden spoon. I pour it in a jelly roll pan (10 x 15) and then evenly sprinkle the top with the remaining 1/4 cup of brown sugar. It will look kind of separated but that is okay. Bake at 350 for about 55 minutes. That seems like a long time but that is how long I bake it. To serve, I cut it into pieces and put it in a bowl and add a little milk. They are chewy and, I think, delicious! I keep it in the fridge. You could cut into serving sizes and freeze to take out as you need. I usually warm it in the microwave when I eat it in a bowl with milk. Note: 3/10/07- used figs for fruit and eliminated 1/2 cup oil, added 1/2 c applesauce and about 1/2 c pumpkin, decreased milk to 1 cup. Excellent! |
